Banana Split Protein Hotcakes

The classic combination of Banana Split ingredients and flavours brought together into a healthy yet next level meal for anytime of day!
Ingredients:
Pancakes
2-3 large free-range eggs
1/4 cup (70g / 2 1/2 oz) Pic's Smooth Peanut Butter
1/4 cup (60ml / 2 fl oz) pure maple syrup
1 tsp vanilla extract
1/4 cup (25g / 1 oz) Keep It Cleaner WPI Vanilla Protein Powder
1/4 cup almond flour
1/2 cup (140g / 5 oz) tapioca flour or arrowroot
1 tsp gluten-free baking powder
Olive oil or butter, for frying
Caramelised Bananas
2 tbsp extra virgin olive or coconut oil
2 tbsp granulated coconut sugar
2 medium bananas, peeled, sliced and halved, then halved lengthways
To Serve
Fresh strawberries, sliced
Greek or coconut yoghurt
Roughly chopped toasted peanuts or pecans
Method:
In a large bowl, whisk the two eggs together until light and fluffy, then when well combined whisk in the smooth peanut butter, maple syrup and vanilla extract until nice and smooth and well incorporated.
Add the protein powder, almond flour, tapioca flour and baking powder and whisk together until you have no lumps and it turns into a lovely thick golden batter. Add an extra egg if you need to loosen it up a little.
Bring a frypan up to medium-high heat adding a generous amount of your preferred cooking oil or fat. Use the 1/4 cup measurement to scoop the batter into the hot pan, waiting for it to bubble lightly before flipping and continuing to cook for 1-2 minutes or until golden.
They should be golden brown on both sides and lovely and light and fluffy. Repeat this 3 more times to make a total of 4 even-sized hotcakes.
Meanwhile, for the caramelised bananas, place your oil, coconut sugar and a splash of water in a small frying pan over medium heat and stir until the sugar has melted. Add the sliced banana and fry on each side for 3–4 minutes or until golden, softened and caramelised.
Serve your hotcakes hot, topped with a generous dollop of your favourite yoghurt (or ice cream), the caramelised banana, fresh sliced strawberries and toasted nuts.
