Celebration Cake

makes 1 cake

Ingredients:

420 g MCKENZIE’S Three Beas Mix, Drained
1/4 cup water
5 eggs
1 tbsp vanilla extract
140 g butter
180 g coconut sugar
80 g raw cacao powder
1 tsp gluten-free baking powder
1/2 tsp bicarbonate of soda
1/4 tsp salt

To finish 
Raw cacao powder, to sifted
2 cups mixed berries, sliced 
Ice cream, cream, or yoghurt, to serve, optional 

Method:

Preheat your oven to 180°C (350°F).

In a powerful food processor, puree the beans and water until smooth. Turn out into a bowl and set aside. 

Next combine the butter and sugar in the same food processor and blitz until well combined, pale and fluffy. Return the beans to the mixture followed by the remaining cake ingredients, blitzing again until all are completely incorporated and you have a thick, chocolatey batter.

Pour the batter out into a 22 cm greased and lined round spring-form cake tin and bake for approximately 30-35 minutes. The cake will spring back when touched and the skewer will come out clean when cooked.

Finish with a sprinkle of cacao powder with berries and yoghurt to serve. Enjoy!
