Choc Coffee Protein Bars

Serves: makes 6 large bars or 12 small bars
I love coffee and I love protein, and this recipe really elevates the both of them into a way that will have you buzzing beautifully throughout your entire day!
Ingredients:
1 1/2 cups quick oats
1 cup raw cacao powder
1 cup desiccated coconut
60 g vanilla WPI protein powder
4 tbsp granulated coconut sugar
1/2 tsp salt
2 cups brewed ST ALI Coffee, cooled, not hot
1/2 cup dark chocolate, melted, for drizzling
Flaked or coarse salt, for sprinkling
Method:
Get started by combining quick oats, desiccated coconut, raw cacao powder, vanilla protein powder, coconut sugar, and salt in a large bowl and mixing well.
Add the brewed St Ali coffee, then mix until well combined and you have a thick batter.
Use your hands to press the batter into a loaf pan (9×5”) lined with baking paper. Then transfer to chill in the refrigerator for at least one hour so it's firm enough to slice.
Meanwhile, melt the dark chocolate in a double boiler until completely runny, and set aside to cool slightly.
Once the batter is set firm, remove it from the refrigerator, then slice it into even-sized bars. Drizzle each with the melted chocolate, then sprinkle them with salt.
The chocolate will set quickly since the bars are nice and cold. Serve and enjoy!
Store the bars in an airtight container in the refrigerator for up to one week.
