Green Apple and Lime Bircher 

Luke Hines Green Apple Bircher

Time: 5 minutes + chilling time
Serves: 2

Ingredients: 

250 ml (1 cup) MADE BY COW Jersey Milk
1/2 cup gluten-free rolled oats
1 tablespoon white chia seeds}
2 tablespoons roughly chopped pecans or walnuts 
2 tablespoons roughly chopped almonds
2 tablespoons roughly chopped sunflower seeds 
2 tablespoons shredded coconut
2 green apples, cored and grated
Zest and juice of 1 lime
1⁄2 teaspoon ground cinnamon

TO SERVE
2 tablespoons vanilla bean coconut yoghurt 
1/2 cup blueberries
Green apple, thinly sliced into disc or wedges

Method: 

Mix all the ingredients together in a bowl to combine, then cover with plastic wrap and place in the fridge overnight.

Serve the next morning topped with vanilla coconut yoghurt and blueberries.

This keeps really well in an airtight container in the fridge for 3-4 days - try making it in bulk so that you have some bircher on hand for the rest of the week.
