Double Choc Hemp Bars

I love myself a healthy treat or snack and this one ticks all of my boxes when it comes to health and flavour, make a big batch and keep on hand for the ultimate in plant-protein perfection.
Ingredients:
Hemp Fudge Base Layer
1/2 cup Hemp Foods Australia Gold Protein Powder
1 cup almond flour
1/2 cup raw cacao powder
1/2 cup smooth peanut butter
1/2 cup Coconut Oil
1/2 teaspoon vanilla bean extract
1/4 cup coconut sugar
Hemp Seed Choc Layer
1/2 cup raw cacao butter
1/2 cup raw cacao powder
1/2 cup Hemp Foods Australia hemp seeds
1/2 cup macadamia nuts roughly chopped
1/4 cup maple syrup
1/4 cup raw cacao nibs
Method:
For the base, mix together the hemp powder, almond meal and raw cacao powder until well combined. Now add the coconut sugar, coconut oil, vanilla bean and peanut butter. Stir well to combine into a thick paste.
Press this mixture into a cake or brownie tin covered with parchment paper and place in the fridge to firm up.
Now get onto the chocolate layer. Over low heat, gently melt down your raw cacao butter and once liquid, stir in your raw cacao powder. Stir or whisk to incorporate and remove from the heat. Add maple syrup, hemp seeds, macadamia nuts and raw cacao nibs, and stir well to combine.
Pour this mixture over your base layer and set in the freezer for 20 minutes or until firm enough to slice and enjoy. Store in an airtight container in the fridge or freezer.
